A Peachy Week

Wow! Now that school is back in session, the days are flying by! I have been so overwhelmed this week with meetings, lesson planning, and getting ready for Open House tomorrow night. I have been waking up at 4:30 to run, work all day and stay late (until at least 4 most days),come home to finish work on my laptop, and have been in bed by 8:30 most nights. Last week was even worse as my body was still adjusting to my work schedule (which sounds strange but it is so true). As a matter of fact, last week Kolby and I were both so tired every day that we procrastinated going to the grocery store until the weekend. While we were there, we had a brilliant dessert idea: peach cobbler. As a kid, I never really ate cobblers or fruit pies-it really wasn't a tradition in my family. On the other hand, Kolby grew up on cobbler being from the South. A few weeks ago he relished in the idea of making me his all time favorite fruit dessert, and I was immediately a lifelong fan after tasting it. Since peaches are in season for a few more weeks, we decided a re-creation of this delectable dish was a must for our busy week (and it makes the perfect dessert after a long night of chatting with parents). Ingredients:

  • 4 cups peeled, sliced peaches
  • 2 cups sugar, divided
  • 1/2 cup water
  • 8 tablespoons butter
  • 1 1/2 cups self rising flour
  • 1 1/2 cups milk
  • Ground cinnamon, optional

  • Directions:
Preheat oven to 350 degrees F.
Combine the peaches, 1 cup sugar, and water in a saucepan and mix well. Bring to a boil and simmer for 10 minutes. Remove from the heat.



Put the butter in a 3-quart baking dish and place in oven to melt.
Mix remaining 1 cup sugar, flour, and milk slowly to prevent clumping. Pour mixture over melted butter. Do not stir. Spoon fruit on top, gently pouring in syrup. Sprinkle top with ground cinnamon, if using. Batter will rise to top during baking. Bake for 30 to 45 minutes.

To serve, scoop onto a plate and serve with your choice of whipped cream or vanilla ice cream. (We used homemade vanilla ice cream the first time we made it and it was FANTASTIC but this time we were lazy and used store bought.)
